Preserving the User and Group information
Export Users and Groups
The first challenge is getting an up to date extract of the User and Group settings, and this is not as straight forward as you may think. The Server Administration tool has no function for extracting Ldap information.
After much searching I discovered that you need to install Workgroup Manager 10.9 which can be downloaded from the Apple Support pages here.
Once installed it is accessible from the Applications folder, and the immediate challenge was; Where are all my users?
Turns out that I have some of my users as Local Users and some as Local Network Users and to switch between the two directories you have to use the bar at the top as shown here. /LDAPv3/127.0.0.1 is the Local Network Users LDAP by the way

Once you have this tool installed you can highlight the Users you need and then click on Server Export to create a file that can then be used to save the users and the Groups that you have created

Or alternatively you can simply record the user data into a table, which is the method that I used
